Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

Juice of 2 lemons

Zest of 1 lemon

2 cloves garlic, minced

2 teaspoons fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed and cut into 2-inch pieces

1 lemon, sliced into rounds (for garnish)

Aluminum foil

Instructions

Prepare Foil Packs: Cut four sheets of aluminum foil, each about 12x12 inches.

Make Marinade: In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, dill, salt, and pepper.

Assemble Ingredients: Place a salmon fillet in the center of each foil sheet. Drizzle each fillet with the marinade, making sure to coat evenly.

Add Vegetables: Divide the halved cherry tomatoes and asparagus pieces among the foil packs, scattering them around the salmon. Drizzle any remaining marinade over the veggies.

Seal Foil Packs: Gently fold over the sides of the foil to create a sealed pack, ensuring no juices can escape.

Preheat Grill/Oven: Preheat your grill to medium-high heat (or preheat your oven to 400°F/200°C).

Cook Salmon Packs: Place the foil packs on the grill or on a baking sheet in the oven. Cook for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.

Serve: Carefully open the foil packs (beware of steam), and garnish with lemon slices and additional dill if desired. Serve immediately with a light side salad or crusty bread.
