Ingredients

2 cups Greek yogurt (plain, low-fat or full-fat)

1 cup mixed berries (strawberries, blueberries, raspberries, blackberries)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

½ cup granola (preferably low-sugar)

Fresh mint leaves for garnish (optional)

A pinch of cinnamon (optional)

Instructions

Prepare the Yogurt Mixture: In a medium-sized bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until smooth and creamy. Taste and adjust sweetness if desired.

Prep the Berries: Rinse the mixed berries under cold water. If using strawberries, remove the stems and cut them into halves or quarters for better layering.

Layer the Parfait: In a glass or bowl, start by adding a spoonful of the yogurt mixture to the bottom. Follow with a layer of mixed berries, followed by a layer of granola.

Repeat Layers: Repeat the layering process until the glass is almost full. Aim for at least two or three layers of yogurt, berries, and granola.

Garnish: Top the final layer with a sprinkle of granola and a few more mixed berries. For an extra touch, add a fresh mint leaf on top. If desired, dust lightly with a pinch of cinnamon for added flavor.

Serve Immediately: Enjoy your light Greek yogurt berry parfait as a healthy breakfast, snack, or dessert! If you need to prepare it in advance, layer everything except the granola and add it just before serving to maintain its crunchiness.
