Light and Creamy Pesto Caprese Pasta Salad

8 oz (about 2 cups) pasta (fusilli or rotini work well)

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls, halved or cubed

1 cup fresh basil leaves, roughly chopped

1 cup creamy pesto (store-bought or homemade)

1/4 cup extra virgin olive oil

1/2 cup baby spinach, chopped

2 tablespoons lemon juice

Salt and pepper to taste

Optional: Grated Parmesan cheese for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Pesto Dressing: In a mixing bowl, combine the creamy pesto, olive oil, lemon juice, salt, and pepper. Whisk until smooth and well blended. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, add the cooked pasta, cherry tomatoes, mozzarella, basil, and spinach. Pour the pesto dressing over the mixture.

        Toss Gently: With a spatula or large spoon, gently toss the pasta salad ingredients together until everything is nicely coated with the pesto dressing. Take care not to crush the mozzarella.

          Chill: Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld together.

            Serve: When ready to serve, give the salad a gentle toss, check that the seasoning is right, and if desired, sprinkle with grated Parmesan cheese before enjoying!
