Ingredients

1 lb chicken tenders

1/2 cup all-purpose flour

1/2 cup breadcrumbs (Panko preferred for extra crunch)

1 tsp salt

1 tsp black pepper

1 tsp lemon pepper seasoning

1/2 tsp garlic powder

1/2 tsp onion powder

2 large eggs

1 tbsp water

Zest of 1 lemon

1/4 cup fresh lemon juice

1/4 cup olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken:

    - Rinse the chicken tenders under cold water and pat them dry with paper towels. This helps the coating adhere better.

      Set Up the Breading Station:

        - In one bowl, whisk together the flour, salt, black pepper, lemon pepper seasoning, garlic powder, and onion powder.

          - In another bowl, beat the eggs and mix in the water.

            - In a third bowl, place the breadcrumbs mixed with the lemon zest.

              Coat the Chicken:

                - Dip each chicken tender first in the flour mixture, shaking off any excess.

                  - Next, immerse it in the egg mixture, allowing any excess to drip off.

                    - Finally, roll the tender in the breadcrumb mixture, ensuring it's evenly coated. Place coated tenders on a plate and repeat with remaining chicken.

                      Cook the Chicken:

                        - Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully add the chicken tenders in batches, ensuring not to overcrowd the pan.

                          - Cook for about 4-5 minutes per side, or until golden brown and the chicken is cooked through (internal temperature of 165°F). Adjust the heat as necessary to prevent burning.

                            Drizzle with Lemon Juice:

                              - Once cooked, transfer the tenders to a serving platter. Immediately drizzle with fresh lemon juice to enhance flavor.

                                Garnish and Serve:

                                  - Sprinkle with freshly chopped parsley for a pop of color. Serve the Lemon Pepper Chicken Tenders hot with your choice of dipping sauce, such as ranch or honey mustard.
