Ingredients

For the Filling:

1 cup granulated sugar

1 cup milk

1/2 cup unsalted butter, melted

1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

1 1/2 cups all-purpose flour

4 large eggs

1 teaspoon baking powder

1/4 teaspoon salt

For the Topping:

Powdered sugar, for dusting

Fresh lemon slices, for garnish (optional)

Whipped cream (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish with butter or cooking spray.

Blend the Ingredients: In a blender or large bowl, combine the granulated sugar, milk, melted butter, fresh lemon juice, lemon zest, all-purpose flour, eggs, baking powder, and salt. Blend or whisk until smooth and well combined.

Pour into Pie Dish: Pour the mixture into the greased pie dish. The batter will seem quite thin, but that’s normal!

Bake: Place the pie dish in the preheated oven and bake for 35-40 minutes. The pie will puff up in the oven and form a light golden crust on top, while the filling will settle below.

Cool Down: Once done, remove the pie from the oven and let it cool down for at least 15-20 minutes. As it cools, it will sink slightly.

Serve: Dust the top with powdered sugar before serving. Optionally, add fresh lemon slices and whipped cream for extra decoration. Cut into slices and enjoy the fresh, zesty flavor!
