Ingredients

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

Zest of 2 large lemons

1 cup fresh lemon juice (about 4-6 lemons)

1 package (14 oz) of graham crackers

Fresh berries (e.g., strawberries or blueberries) for garnish

Lemon slices for garnish

Instructions

Whip the Cream: In a large mixing bowl, beat the heavy whipping cream using an electric mixer on medium speed until soft peaks form. Gradually add the powdered sugar and continue beating until stiff peaks form. Stir in the vanilla extract and lemon zest until well combined.

Prepare the Lemon Mixture: In another medium bowl, combine the fresh lemon juice with the remaining lemon zest (if desired). Stir until combined.

Assemble the Cake: On the bottom of a 9x13 inch dish, layer a single layer of graham crackers. Using a spatula, spread a generous layer of whipped cream mixture over the graham crackers. Drizzle about a third of the lemon mixture over the whipped cream. Repeat this process: add another layer of graham crackers, followed by whipped cream, and then another drizzle of lemon juice. Continue this layering process until you've exhausted your ingredients, finishing with whipped cream on top.

Chill: Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight. This allows the flavors to meld and the graham crackers to soften.

Serve: Once chilled, slice the cake into squares, garnish with fresh berries and lemon slices, then serve immediately.

Enjoy: Relish the refreshing taste of this lemon icebox cake which is perfect for any occasion!
