Ingredients

8 chicken drumsticks

2 lemons (zested and juiced)

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)

1 tablespoon fresh parsley, chopped

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

Optional: Lemon wedges and fresh herbs for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Marinade: In a large mixing bowl, combine the lemon juice, lemon zest, olive oil, minced garlic, thyme, rosemary, parsley, salt, pepper, and paprika. Whisk until well combined.

Marinate Drumsticks: Add the chicken drumsticks to the bowl and toss them in the marinade until thoroughly coated. For best results, cover and refrigerate for at least 30 minutes, or up to overnight.

Prepare Baking Sheet: Line a baking sheet with aluminum foil or parchment paper for easy cleanup. Place a wire rack on top if you have one; this helps with even cooking.

Arrange Drumsticks: Remove the drumsticks from the marinade, shaking off any excess. Arrange them in a single layer on the prepared baking sheet or wire rack.

Roast Chicken: Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is golden brown and crispy. You can check doneness with a meat thermometer; the internal temperature should reach 165°F (74°C).

Serve: Once cooked, remove from the oven and let rest for 5 minutes. Garnish with lemon wedges and extra fresh herbs before serving.
