4 boneless, skinless chicken breasts

1/4 cup olive oil

3 tablespoons fresh lemon juice (about 1 lemon)

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

For the Quinoa:

1 cup quinoa

2 cups chicken or vegetable broth (or water)

1 tablespoon olive oil

1/2 teaspoon salt

1/4 cup chopped green onions

1/4 cup diced cucumber (optional)

1/4 cup cherry tomatoes, halved (optional)

Fresh lemon juice (to taste)

Instructions
 

Marinate the Chicken:

    - In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.

      - Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours for maximum flavor.

        Cook the Quinoa:

          - Rinse quinoa under cold water in a fine mesh strainer.

            - In a saucepan, combine the rinsed quinoa and broth (or water) along with olive oil and salt. Bring to a boil over medium-high heat.
