Lemon Herb Butter Roasted Chicken

Ingredients
  

1 whole chicken (4-5 lbs)

4 tablespoons unsalted butter, softened

1 lemon (zest and juice)

4 cloves garlic, minced

2 tablespoons fresh thyme leaves

2 tablespoons fresh rosemary, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon salt

½ teaspoon black pepper

1 onion, quartered

1 cup chicken broth

Optional: lemon slices and fresh herbs for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Butter Mixture: In a mixing bowl, combine the softened butter, lemon zest, lemon juice, minced garlic, thyme, rosemary, salt, and pepper. Mix until well combined.

      Prepare the Chicken: Pat the whole chicken dry with paper towels (this helps achieve a crispy skin). Gently loosen the skin over the chicken breast using your fingers, being careful not to tear it.

        Apply the Herb Butter: Take about half of the lemon herb butter mixture and carefully spread it under the skin of the chicken. Rub the remaining mixture all over the outside of the chicken, ensuring even coverage.

          Stuff the Chicken: Place the quartered onion inside the cavity of the chicken for added flavor.

            Set Up for Roasting: Place the chicken in a roasting pan, breast-side up. Pour the chicken broth into the bottom of the pan to keep the chicken moist while roasting.

              Roast the Chicken: Roast in the preheated oven for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature in the thickest part of the chicken (thigh) reaches 165°F (75°C). Baste the chicken with the pan juices halfway through cooking.

                Rest the Chicken: Once fully cooked, remove the chicken from the oven and let it rest for about 10-15 minutes. This allows the juices to redistribute for a moist and flavorful chicken.

                  Garnish and Serve: If desired, garnish with lemon slices and fresh herbs before carving. Serve with your favorite sides.
