Ingredients

1/2 cup (1 stick) unsalted butter, softened

8 oz cream cheese, softened

1/2 cup granulated sugar

1/2 cup powdered sugar (for dusting)

1 large egg

1 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons fresh lemon juice

2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Creaming Butter and Cream Cheese: In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.

Mix in Sugars and Egg: Add the granulated sugar and beat until well combined. Then, add the egg and mix in the vanilla extract, lemon zest, and lemon juice until fully incorporated.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until just combined.

Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes. This will help the cookies maintain their shape while baking.

Scoop and Roll: Once chilled, scoop tablespoons of dough and roll them into balls. Roll each dough ball in powdered sugar to coat completely.

Bake the Cookies: Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers still look soft.

Cool Down: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve & Enjoy: Once cooled, dust with additional powdered sugar if desired and enjoy these delightful lemon gooey butter cookies with a cup of tea or coffee!
