Ingredients

1.5 pounds turkey tenderloin

3 tablespoons olive oil

4 cloves garlic, minced

Juice and zest of 2 lemons

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 pound baby potatoes, halved

1 cup green beans, trimmed

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper.

Marinate the Tenderloin: Place the turkey tenderloin in a medium bowl or a resealable plastic bag. Pour half of the marinade over it, ensuring it’s well coated. Let it marinate for at least 30 minutes, preferably in the fridge for deeper flavor.

Prepare Vegetables: While the turkey is marinating, place the halved baby potatoes in a large bowl. Drizzle with a bit of olive oil, salt, and pepper, tossing to combine.

Arrange on the Sheet Pan: On a large sheet pan lined with parchment paper, arrange the marinated turkey tenderloin in the center. Surround it with the seasoned baby potatoes and the green beans. Drizzle the remaining marinade over the vegetables.

Bake: Roast in the preheated oven for 25-30 minutes, or until the turkey reaches an internal temperature of 165°F (74°C) and the vegetables are tender.

Rest and Slice: Once cooked, remove the sheet pan from the oven. Allow the turkey tenderloin to rest for about 5 minutes before slicing.

Serve: Garnish with freshly chopped parsley if desired, and serve the turkey tenderloin slices alongside the roasted potatoes and green beans.
