Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon paprika (smoked or regular)

½ teaspoon ground cumin

½ teaspoon sea salt (adjust to taste)

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

Prepare Chickpeas: After draining and rinsing the chickpeas, make sure to dry them thoroughly using a clean kitchen towel or paper towels. Removing excess moisture will help them get crispy.

Seasoning Mixture: In a large mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, paprika, cumin, sea salt, black pepper, and cayenne pepper (if using). Stir well to combine.

Coat Chickpeas: Add the dried chickpeas into the bowl with the seasoning mixture. Toss them gently until the chickpeas are evenly coated with the lemon garlic mixture.

Roast: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Make sure they are not crowded; this ensures they roast evenly and become crispy.

Bake: Place the baking sheet in the preheated oven and roast for about 25-30 minutes, shaking the pan halfway through to ensure they do not burn and cook evenly. Keep an eye on them towards the end; you want them golden and crispy.

Cool and Serve: Once roasted, remove them from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley for an added pop of color and flavor.

Enjoy: Serve these crunchy chickpeas as a snack or sprinkle them over salads or grain bowls for added texture.
