Lemon Garlic Hummus Wraps

Ingredients
  

1 cup chickpeas, cooked (or canned, rinsed and drained)

3 tbsp tahini

2 cloves garlic, minced

2 tbsp fresh lemon juice

Zest of 1 lemon

2 tbsp olive oil

Salt and pepper to taste

1/4 tsp ground cumin

4 whole wheat tortillas or wraps

1 cup fresh spinach leaves

1 medium cucumber, sliced

1 large carrot, julienned

1/2 red bell pepper, sliced

1/4 cup feta cheese, crumbled (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Hummus: In a food processor, combine the chickpeas, tahini, garlic, lemon juice, lemon zest, olive oil, salt, pepper, and cumin. Blend until smooth and creamy. You can add a little water if the consistency is too thick.

    Taste and Adjust: Taste the hummus and adjust seasoning if necessary, adding more garlic, lemon juice, or salt according to your preference.

      Prepare Vegetables: While the hummus is blending, wash and slice the cucumber, julienne the carrot, and slice the bell pepper.

        Assemble the Wraps:

          - Lay out a tortilla or wrap on a clean surface or plate.

            - Spread a generous amount of lemon garlic hummus over the tortilla, leaving about an inch of space around the edges.

              - Layer fresh spinach, cucumber slices, julienned carrots, sliced bell peppers, and feta cheese (if using) on top of the hummus.

                Wrap It Up: Starting from the side closest to you, roll the tortilla tightly away from you, folding in the sides as you go to secure the filling. Slice the wrap in half diagonally for presentation.
