Ingredients

1 pound fresh green beans, trimmed

2 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 tablespoon soy sauce

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon sesame seeds (optional)

Salt and black pepper to taste

1 tablespoon chopped fresh parsley for garnish

Instructions

Prepare the Green Beans: Start by washing and trimming the ends off the green beans. Blanch them in boiling water for about 2-3 minutes until they are vibrant green and just tender. Immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.

Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat.

Sauté Garlic: Add the minced garlic to the skillet, sautéing it for about 30 seconds or until fragrant. Be careful not to burn it.

Stir Fry the Green Beans: Add the blanched green beans to the skillet and stir-fry them for about 3-4 minutes, ensuring they are evenly coated with the garlic oil.

Season the Stir Fry: Pour in the soy sauce, lemon juice, and lemon zest. Sprinkle in the red pepper flakes, salt, and black pepper, and continue to stir-fry for another 2-3 minutes until the beans are tender but still crisp.

Garnish and Serve: Remove from heat and sprinkle the sesame seeds and chopped parsley on top for an added crunch and freshness. Serve immediately as a side dish or over cooked rice/quinoa for a light meal.
