Ingredients

8 oz soba noodles

1 cup shelled edamame (fresh or frozen)

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

3 tablespoons fresh lemon juice

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

1/4 cup green onions, chopped

1/4 cup sesame seeds, toasted

Salt and pepper to taste

Instructions

Cook the Noodles: Bring a large pot of salted water to a boil. Add the soba noodles and cook according to the package instructions, usually around 4-6 minutes. Drain the noodles and rinse them under cold water to stop the cooking process. Set aside.

Prepare the Edamame: If using frozen edamame, add them to a saucepan of boiling water for about 3-5 minutes or until heated through. Drain and set aside.

Make the Dressing: In a small mixing bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, soy sauce, sesame oil, and red pepper flakes. Add salt and pepper to taste.

Combine Ingredients: In a large mixing bowl, combine the cooked soba noodles, edamame, and the dressing. Toss gently to combine everything thoroughly, ensuring the noodles and edamame are well coated with the lemon-garlic mixture.

Serve: Divide the noodles into serving bowls. Top with chopped green onions and sprinkle with toasted sesame seeds for added crunch and flavor.

Garnish (Optional): Add a few extra lemon wedges on the side for an extra zing, or a sprinkle of fresh herbs like cilantro or parsley if desired.

Enjoy: Serve immediately or refrigerate for up to a day if you want to prepare in advance. It tastes amazing cold too!
