8 oz (225 g) fusilli pasta (or any pasta of choice)

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

½ cucumber, diced

¾ cup bell peppers (red or yellow), diced

¼ red onion, finely chopped

½ cup black olives, sliced (optional)

2 cups fresh spinach or arugula

1/3 cup fresh parsley, chopped

Zest and juice of 1 large lemon

3 cloves garlic, minced

4 tablespoons extra virgin olive oil

1 teaspoon Dijon mustard

Salt and pepper, to taste

Crumbled feta cheese, for topping (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the lemon zest, lemon juice, minced garlic, olive oil, Dijon mustard, salt, and pepper. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chickpeas, cherry tomatoes, cucumber, bell peppers, red onion, black olives, spinach, and parsley. Toss gently to combine.
