2 salmon fillets (about 6 ounces each)

2 tablespoons unsalted butter, melted

3 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 bell pepper (red, yellow, or green), sliced

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prep the Oven and Veggies: Preheat your oven to 400°F (200°C). While the oven is heating, prepare the vegetables. In a bowl, combine the cherry tomatoes, zucchini, and bell pepper. Drizzle with olive oil, and season with salt and pepper. Toss to coat.

    Prepare the Salmon Mixture: In a small bowl, mix together the melted butter, minced garlic, lemon zest, lemon juice, and dried oregano. Whisk until well combined.

      Arrange Ingredients: On a large baking sheet lined with parchment paper, place the salmon fillets in the center. Arrange the seasoned vegetables around the salmon in a single layer.

        Baste with Garlic Butter: Pour the garlic butter mixture over the salmon fillets, ensuring they are well coated. Drizzle any remaining butter over the veggies, adding a touch more salt and pepper, if desired.

          Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and the veggies are tender roast.

            Garnish and Serve: Once cooked, remove from the oven. Garnish the salmon with fresh chopped parsley and serve with lemon wedges on the side for an extra burst of flavor.
