4 salmon fillets (about 6 oz each)

4 tablespoons unsalted butter

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 tablespoon fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika (optional)

For the Crispy Potatoes:

1 lb baby potatoes, halved or quartered

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Crispy Potatoes:

      - In a large mixing bowl, combine the halved or quartered baby potatoes, olive oil, garlic powder, dried thyme, salt, and pepper. Toss well to coat the potatoes evenly.

        - Spread the potatoes out in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until golden and crispy.

          Prepare the Lemon Garlic Butter:

            - In a small saucepan, melt 4 tablespoons of unsalted butter over medium heat.

              - Add the minced garlic and sauté for about 1-2 minutes until fragrant (do not let it brown).

                - Stir in the lemon zest and juice, and season with salt, pepper, and smoked paprika if using. Mix well and remove from heat. Stir in the fresh parsley.

                  Cook the Salmon:
