Lemon Dill Roasted Salmon and Baby Potatoes

For the Salmon:

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

2 cloves garlic, minced

Salt and pepper to taste

Lemon slices for garnish

For the Baby Potatoes:

1 pound baby potatoes, halved

2 tablespoons olive oil

1 tablespoon fresh dill, chopped

1 teaspoon garlic powder

Salt and pepper to taste

1 teaspoon smoked paprika (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Baby Potatoes: In a large bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, fresh dill, garlic powder, salt, pepper, and smoked paprika (if using). Toss until the potatoes are well coated.

      Roast the Potatoes: Spread the seasoned baby potatoes on a baking sheet in a single layer. Roast in the oven for about 15 minutes.

        Prepare the Salmon: While the potatoes are roasting, in a small bowl, whisk together 2 tablespoons of olive oil, lemon juice, lemon zest, chopped dill, minced garlic, salt, and pepper to create a marinade.

          Coat the Salmon: Place the salmon fillets on a separate baking sheet lined with parchment paper. Brush the marinade evenly over the salmon fillets, ensuring they are well covered.

            Combine and Roast: After the potatoes have roasted for 15 minutes, remove them from the oven and stir them. Place the salmon on the same baking sheet alongside the potatoes. Return both the potatoes and salmon to the oven and roast for an additional 12-15 minutes, or until the salmon flakes easily with a fork and the potatoes are golden brown.

              Serve: Remove from the oven and let sit for a couple of minutes. Garnish the salmon with lemon slices and additional fresh dill if desired. Serve the lemon dill roasted salmon with the herbed baby potatoes on the side for a wholesome and vibrant meal.
