Lemon Blueberry Yogurt Bars

1 cup rolled oats

1 cup almond flour (or whole wheat flour)

1/4 cup coconut sugar (or brown sugar)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup coconut oil, melted (or unsalted butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup Greek yogurt

Juice and zest from 1 large lemon

1 cup fresh blueberries (or frozen, if fresh are unavailable)

Optional: extra blueberries and lemon zest for topping

Instructions
 

Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare the crust base: In a medium bowl, combine rolled oats, almond flour, coconut sugar, baking powder, and salt. Stir until well mixed.

      Add wet ingredients: Pour in the melted coconut oil, honey (or maple syrup), and vanilla extract into the dry ingredients. Mix until fully combined and a crumbly mixture forms.

        Press the crust: Take about two-thirds of the crust mixture and evenly press it into the bottom of the prepared baking pan. Use your fingers or a spatula to create a compact layer.

          Make the yogurt filling: In a separate bowl, whisk together the Greek yogurt, lemon juice, lemon zest, and remaining coconut sugar until creamy and smooth. Gently fold in fresh blueberries.

            Layer the filling: Spread the yogurt-blueberry mixture evenly over the crust in the pan.

              Add topping: Crumble the remaining one-third of the crust mixture over the top of the yogurt filling. This will create a delightful topping.

                Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the topping is lightly golden and the filling is set.

                  Cool down: Remove the bars from the oven and let them cool completely in the pan. Once cooled, transfer to the refrigerator for at least 2 hours to firm up.

                    Slice and serve: Once chilled and set, use the parchment overhang to lift the bars out of the pan. Cut into squares or rectangles. Top with additional blueberries and a sprinkle of lemon zest if desired.

                      Store: Keep any leftovers in an airtight container in the refrigerator for up to a week.
