Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 tablespoons lemon zest (about 1 large lemon)

1 teaspoon vanilla extract

½ cup buttermilk

1 ½ cups fresh blueberries (plus extra for garnish, if desired)

2 tablespoons fresh lemon juice

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard loaf pan (approximately 9x5 inches) or line it with parchment paper for easy removal.

Combine Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).

Add Eggs and Flavorings: Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest and vanilla extract until fully combined.

Mix Wet Ingredients: In a small bowl, whisk together the buttermilk and fresh lemon juice. This will create a buttermilk-like mixture that adds richness to the loaf.

Combine All Ingredients: Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk mixture. Start and end with the flour mixture (flour → buttermilk → flour → buttermilk → flour), mixing on low speed until just combined. Be careful not to over-mix.

Fold in Blueberries: Gently fold in the fresh blueberries using a spatula, ensuring they are evenly distributed throughout the batter.

Pour into Loaf Pan: Transfer the batter into the prepared loaf pan, smoothing the top with a spatula. You can sprinkle a few extra blueberries on top for an attractive presentation.

Bake: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer the loaf to a wire rack to cool completely.

Serve: Once fully cooled, slice and enjoy! Optionally, dust with powdered sugar before serving for an extra touch of sweetness.
