Instructions

Make the Danish Dough:

    - In a large bowl, combine the flour, salt, and sugar. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

      - In a separate small bowl, mix the cold milk and instant yeast until dissolved. Pour this mixture into the flour-butter mixture. Stir until just combined into a dough.

        - Turn the dough out onto a lightly floured surface and knead gently just until smooth. Form it into a rectangle, wrap it in plastic wrap, and refrigerate for 30 minutes.

          Prepare the Cream Cheese Filling:

            - In a medium bowl, beat the softened cream cheese until smooth. Add the powdered sugar, lemon juice, lemon zest, and vanilla extract. Mix until well combined and set aside.

              Make the Blueberry Topping:

                - In a small saucepan over medium heat, combine the fresh blueberries, sugar, lemon juice, cornstarch, and water. Stir gently and cook for about 5-7 minutes, until the mixture is bubbly and thickened. Remove from heat and allow to cool slightly.

                  Roll Out the Dough:

                    - Preheat your oven to 375°F (190°C). Roll the chilled dough out into a large rectangle on a floured surface to about 1/4 inch thick. Cut the dough into squares (about 4x4 inches).

                      Fill and Shape the Danishes:

                        - Place a generous tablespoon of the cream cheese filling in the center of each square. Add a few spoonfuls of the blueberry mixture on top of the cream cheese filling. Fold the corners of each square towards the center and pinch to seal, creating a pocket for the filling.

                          Prepare for Baking:

                            - Place the assembled danishes on a parchment-lined baking sheet. In a small bowl, whisk together the beaten egg and water to create an egg wash. Brush the tops of the danishes with the egg wash.

                              Bake:

                                - Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown. Remove from the oven and allow to cool slightly.

                                  Garnish and Serve:

                                    - Dust with powdered sugar if desired for a sweet finish. Enjoy your warm Lemon Blueberry Cream Cheese Danishes!
