2 fillets of white fish (such as cod, tilapia, or halibut)

1 large lemon (zested and juiced)

1 tablespoon olive oil

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 small zucchini, thinly sliced

1 small yellow squash, thinly sliced

1 small red bell pepper, sliced

1/4 cup fresh basil leaves, torn

Salt and pepper, to taste

Parchment paper (for wrapping)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Parchment: Cut two large pieces of parchment paper, each about 15x12 inches. Fold each piece in half and then unfold it to create a crease down the center. This will help you place your ingredients and fold the parchment later.

      Mix the Marinade: In a small bowl, whisk together the lemon zest, lemon juice, olive oil, and minced garlic. Season with salt and pepper.

        Assemble the Packets: Place each fish fillet on one side of the parchment paper. Drizzle a bit of the lemon-garlic mixture over each fillet.

          Layer the Veggies: Arrange the cherry tomatoes, zucchini, yellow squash, and red bell pepper around the fish in the parchment. Drizzle more of the lemon-garlic mixture over the vegetables.
