4 chicken legs (drumsticks and thighs)

1 can (10.5 oz) cream of mushroom soup

1 cup heavy cream

1 cup mushrooms (sliced, preferably cremini or button)

1 medium onion (chopped)

3 cloves garlic (minced)

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken legs with salt, pepper, and smoked paprika. Rub the spices in to coat evenly.

      Sauté Vegetables: In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Add the minced garlic and sliced mushrooms, cooking until mushrooms are tender and have released moisture, around 4-5 minutes.

        Combine Ingredients: Stir in the cream of mushroom soup, heavy cream, and dried thyme. Mix until well combined. Let the mixture simmer for a couple of minutes to blend the flavors.

          Add Chicken: Nestle the seasoned chicken legs into the creamy mushroom mixture, ensuring they are mostly submerged.

            Bake: Transfer the skillet or Dutch oven to the preheated oven and bake uncovered for 45-50 minutes or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the skin is golden and crispy.

              Garnish and Serve: Once done, remove from the oven and let it rest for about 5 minutes. Garnish with freshly chopped parsley before serving.
