For the Strawberry Layer:

2 large eggs

1 cup buttermilk

1 tsp vanilla extract

2 tsp baking powder

For the Buttercream Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

¼ cup heavy cream

1 tsp vanilla extract

Food coloring (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

Prepare the Vanilla Layer: In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the buttermilk and vanilla extract. In a separate bowl, whisk together the flour, baking powder, and salt, then gradually add to the wet ingredients until just combined. Divide the batter evenly into one of the prepared pans.

Prepare the Chocolate Layer: Repeat the process for the chocolate layer, combining all the ingredients, but include the cocoa powder in the dry ingredients. Pour the chocolate batter into the second prepared pan.

Prepare the Strawberry Layer: For the strawberry layer, follow the same method, mixing the wet ingredients and dry ingredients separately and then combining them. Gently fold in the chopped strawberries before pouring the batter into the third prepared pan.

Bake: Bake all three layers in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Make the Buttercream Frosting: In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the heavy cream. Mix until smooth and fluffy, then stir in the vanilla extract. Optionally, add food coloring to create a marbled effect for a fun touch.

Assemble the Cake: Once the layers are completely cool, place the vanilla layer on a serving plate. Spread a layer of buttercream frosting on top. Next, place the chocolate layer on top of the frosting and repeat the frosting process. Finally, add the strawberry layer and use the remaining frosting to cover the entire cake.

Decorate (Optional): You can pipe decorative swirls with the buttercream on top, and sprinkle with additional chopped strawberries or chocolate shavings for an extra special finish.

Serve and Enjoy: Slice the cake into wedges and serve to enjoy your delightful Lazy Sunday Neapolitan Cake!
