2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

½ cup unsalted butter, chilled and cubed

1 cup shredded sharp cheddar cheese

½ cup chopped fresh jalapeños (seeds removed for less heat)

¾ cup buttermilk

1 tablespoon honey (optional)

1 egg (for egg wash)

Additional jalapeño slices and cheddar for topping (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Cut in the Butter: Add the chilled cubed butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

        Add Cheese and Jalapeños: Stir in the shredded sharp cheddar cheese and chopped jalapeños until evenly distributed throughout the flour mixture.

          Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk and optional honey. Slowly add the buttermilk mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; the dough should be slightly sticky.

            Shape and Layer the Dough: Turn the dough out onto a floured surface. Gently knead it a few times until it comes together. Pat the dough into a rectangle about 1 inch thick. Fold the dough in half, then press it down again to about 1 inch thick, creating layers.

              Cut the Biscuits: Using a floured biscuit cutter, cut out biscuits from the dough. Press straight down without twisting to maintain the layers. Place the cut biscuits onto the lined baking sheet.
