Ingredients
  

1 lb Italian sausage (or ground beef)

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 tsp dried basil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste

8 oz lasagna noodles, broken into pieces

2 cups fresh spinach (or kale)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil or parsley for garnish

Instructions
 

Brown the Meat: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage or ground beef, breaking it up with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Vegetables: Add the diced onion and minced garlic to the pot. Sauté for another 3-4 minutes until the onion is translucent and fragrant.

      Incorporate Tomatoes and Broth: Pour in the crushed tomatoes and chicken or vegetable broth. Stir to combine.

        Season the Soup: Add the dried basil, oregano, red pepper flakes (if using), and season with salt and black pepper. Bring the mixture to a simmer.

          Cook the Noodles: Add the broken lasagna noodles to the pot. Let the soup simmer for about 10-12 minutes, or until the noodles are al dente.

            Add Greens: Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.

              Prepare the Ricotta Mixture: In a small bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Stir until well mixed.

                Serve: Ladle the soup into bowls. Add a generous scoop of the ricotta mixture on top of each serving. Sprinkle with the remaining mozzarella and Parmesan cheeses. Garnish with fresh basil or parsley.
