1 package (16 oz) frozen pierogi (potato and cheese or onion flavor)

1 lb kielbasa (or Polish sausage), sliced into ¼-inch pieces

1 medium yellow onion, diced

2 tablespoons olive oil

1 cup shredded cheddar cheese

1 cup sour cream

2 cups sauerkraut, drained and rinsed

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Kielbasa: In a large skillet, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove the kielbasa from the skillet and set aside.

      Sauté Onion: In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add garlic powder, smoked paprika, salt, and pepper, and stir until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooked kielbasa, sautéed onions, frozen pierogi, sauerkraut, and half of the cheddar cheese (reserve the other half for topping). Gently mix to ensure everything is well incorporated.

          Prepare Baking Dish: Grease a 9x13 inch baking dish with non-stick spray or oil. Pour the pierogi mixture into the dish, spreading it evenly.

            Add Sour Cream: Dollop the sour cream over the top of the pierogi mixture, spreading it out slightly with a spatula to cover.

              Top with Cheese: Sprinkle the remaining shredded cheddar cheese evenly over the sour cream layer.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Once baked, let it cool for a few minutes. Garnish with freshly chopped parsley before serving. Enjoy!
