Ingredients

1 pound ground turkey

1 medium sweet potato (about 1 cup when mashed)

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

1 clove garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

2 tablespoons fresh parsley, chopped (optional for garnish)

Olive oil for baking

Instructions

Prepare Sweet Potato: Begin by peeling and cubing the sweet potato. Boil it in a pot of water until tender, about 15-20 minutes. Drain and mash until smooth. Let it cool slightly.

Mix Ingredients: In a large mixing bowl, combine the ground turkey, mashed sweet potato, breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, oregano, thyme, salt, pepper, and paprika. Use your hands to mix until all ingredients are well incorporated but do not overmix.

Form Meatballs: Preheat your oven to 400°F (200°C). Lightly grease a baking sheet with olive oil. Roll the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

Bake: Lightly brush the tops of the meatballs with a little olive oil for an extra crispy finish. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.

Serve: Once done, remove the meatballs from the oven. Garnish with fresh parsley if desired. Serve them with your child's favorite dipping sauce, such as marinara or a yogurt-based sauce, alongside some steamed veggies or pasta for a complete meal.
