Juicy Grilled Peach BBQ Chicken

4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

1 cup barbecue sauce (your favorite brand or homemade)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon fresh thyme or ½ teaspoon dried thyme

1 tablespoon apple cider vinegar

Fresh mint leaves, for garnish (optional)

Marinate the Chicken: In a large bowl, mix together the olive oil, minced garlic, smoked paprika, salt, black pepper, thyme, and apple cider vinegar. Add the chicken breasts and coat them well. Cover with plastic wrap and refrigerate for at least 30 minutes (up to 2 hours for better flavor).

    Prepare the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). If you're using a charcoal grill, make sure the coals are evenly spread out.

      Grill the Chicken: Remove the chicken from the marinade and let any excess drip off. Place the chicken on the grill. Cook for about 6-7 minutes on one side, then flip and grill for another 5-6 minutes, or until the internal temperature reaches 165°F (75°C).

        Grill the Peaches: While the chicken is cooking, place the peach slices on the grill grates. Grill for about 2-3 minutes on each side until they develop grill marks and soften slightly.

          Brush with BBQ Sauce: During the last 2 minutes of cooking the chicken, brush a generous amount of barbecue sauce onto each piece, allowing it to caramelize slightly.
