Ingredients

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar)

2 large eggs

1/4 cup unsalted butter, melted

1/2 cup finely diced jalapeños (seeds removed for less heat)

1/4 cup honey

1/2 cup shredded sharp cheddar cheese (optional)

For the Jalapeño Honey Butter:

1/2 cup unsalted butter, softened

1/4 cup honey

1-2 tablespoons finely diced jalapeños (to taste)

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare an 8-inch square or round baking pan by greasing it lightly with butter or non-stick spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, mix the buttermilk, eggs, and melted butter. Stir in the diced jalapeños and cheddar cheese, if using.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold until just combined; do not overmix. The batter should be lumpy.

Pour and Bake: Transfer the batter to the prepared baking pan, smoothing the top with a spatula. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Prepare Jalapeño Honey Butter: While the cornbread is baking, prepare the jalapeño honey butter. In a small bowl, combine the softened butter, honey, diced jalapeños, and a pinch of salt. Mix until thoroughly combined. Adjust the spiciness to your preference.

Cool and Serve: Once the cornbread is baked, remove it from the oven and let it cool for a few minutes in the pan. Serve warm, slathered with the jalapeño honey butter for a delightful sweet and spicy experience!
