Italian Stuffed Cabbage Rolls

1 large head of green cabbage

1 pound ground beef (or a mix of beef and pork)

1 cup cooked rice (white or brown)

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes, drained

1 tablespoon chopped fresh basil (or 1 teaspoon dried basil)

1 teaspoon oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for spice)

½ cup grated Parmesan cheese (plus extra for topping)

Prepare the Cabbage: In a large pot of boiling water, carefully remove the cabbage head. Blanch the entire head for about 5 minutes, then remove it and separate the leaves. Trim the thickest part of each leaf to make them easier to roll. Set aside to cool.

    Prepare the Filling: In a skillet, heat a drizzle of olive oil over medium heat. Sauté the chopped onion and garlic until translucent, about 3-4 minutes. In a large mixing bowl, combine the sautéed onion and garlic with ground beef, cooked rice, chopped basil, oregano, salt, pepper, and grated Parmesan cheese. Mix everything until evenly combined.

      Assemble the Rolls: Place about 2-3 tablespoons of the filling onto the center of each cabbage leaf. Fold in the sides and then roll from the bottom to the top, securing the filling inside. Repeat until all the filling is used.

        Prepare the Sauce: In a mixing bowl, combine the tomato sauce and diced tomatoes. Spread a thin layer of this sauce on the bottom of a large baking dish.

          Arrange and Bake: Place the stuffed cabbage rolls seam-side down in the baking dish. Pour the remaining tomato sauce over the top, ensuring that all rolls are covered. Sprinkle extra Parmesan cheese over the top. Cover the dish with aluminum foil.

            Bake: Preheat your oven to 350°F (175°C). Bake the covered dish for about 45 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and golden on top.
