Ingredients

4 salmon fillets (approximately 6 oz each)

2 cups cherry tomatoes, halved

1 medium yellow onion, thinly sliced

4 cloves garlic, minced

1 cup baby spinach

1/2 cup heavy cream

1/4 cup sun-dried tomatoes, chopped

1 cup vegetable broth (or chicken broth)

1 lemon (zested and juiced)

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Sauté the Aromatics: In a large oven-safe skillet, heat olive oil over medium heat. Add the sliced onion and sauté for about 3 minutes until softened. Add minced garlic and cook for an additional 1 minute until fragrant.

Add the Tomatoes: Stir in the halved cherry tomatoes and sun-dried tomatoes, cooking for about 5-7 minutes until they start to blister and soften.

Create the Sauce: Pour in the vegetable broth, heavy cream, lemon juice, and the Italian seasoning. Stir well and let the mixture simmer on medium heat for about 3-5 minutes, allowing it to reduce slightly.

Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, and lemon zest.

Add Spinach: Reduce heat to low and stir in the baby spinach until just wilted. Make a space for the salmon fillets in the skillet.

Nestle the Salmon: Place the seasoned salmon fillets in the skillet, skin-side down, making sure to place them in the sauce. Spoon some of the sauce over the top of the salmon.

Bake: Transfer the skillet to the preheated oven and bake for about 15-18 minutes or until the salmon is cooked through and flakes easily with a fork.

Finishing Touches: Once out of the oven, sprinkle with crushed red pepper flakes (if using) and garnish with fresh basil leaves. Serve with grated Parmesan cheese if desired.

Serve and Enjoy: Serve immediately, spooning the creamy sauce over the salmon and enjoy a hearty, flavorful meal that’s likely to make anyone fall in love!
