Irish Bacon, Cabbage, and Potato Soup

4 slices of Irish bacon, diced

1 medium onion, finely chopped

2 cloves garlic, minced

3 medium potatoes, peeled and diced

4 cups vegetable or chicken stock

2 cups green cabbage, chopped

1 cup carrots, diced

1 teaspoon dried thyme

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: Crusty bread for serving

Instructions
 

Cook the Bacon: In a large pot over medium heat, add the diced Irish bacon. Sauté for about 5-7 minutes, or until the bacon becomes crispy. Once done, remove the bacon with a slotted spoon and set it aside, leaving the bacon fat in the pot.

    Sauté the Vegetables: In the same pot, add olive oil if necessary. Toss in the chopped onion and garlic, and cook for about 3-4 minutes until softened and fragrant.

      Add Potatoes and Carrots: Stir in the diced potatoes and carrots. Cook for another 5 minutes, stirring occasionally.

        Add Stock and Seasonings: Pour in the vegetable or chicken stock. Add the chopped cabbage, thyme, bay leaf, salt, and pepper. Bring the mixture to a gentle boil.

          Simmer the Soup: Reduce the heat to low and cover the pot. Allow it to simmer for about 20-25 minutes, or until the potatoes and carrots are tender.

            Reintroduce the Bacon: Once the vegetables are cooked, stir the crispy bacon back into the pot. Taste and adjust the seasoning if necessary—add more salt, pepper, or thyme according to your preference.

              Serve: Remove the bay leaf, then ladle the soup into bowls. Garnish with freshly chopped parsley. Serve hot with optional crusty bread on the side to soak up every delicious spoonful.
