Ingredients

1 pound baby carrots (or regular carrots, peeled and chopped)

3 tablespoons unsalted butter

2 tablespoons hot honey (or regular honey mixed with crushed red pepper flakes to taste)

1 tablespoon olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Zest of 1 lemon (optional)

Fresh parsley, chopped for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Carrots: If using regular carrots, peel them and cut into sticks, about 1/2 inch thick. If using baby carrots, you can use them whole.

Make the Hot Honey Butter: In a small saucepan over low heat, combine the butter and hot honey. Stir until the butter is melted and well combined. Remove from heat and set aside.

Toss the Carrots: In a large mixing bowl, combine the carrots, olive oil, sea salt, black pepper, garlic powder, and thyme. Drizzle the melted hot honey butter over the carrots, and toss until they are evenly coated.

Roast the Carrots: Spread the carrots in a single layer on a baking sheet lined with parchment paper. Make sure they’re not overcrowded, so they roast evenly.

Bake: Roast the carrots in the preheated oven for 25–30 minutes, flipping halfway through, until they are tender and caramelized. A fork should easily pierce through, and the edges should be slightly charred.

Finish and Serve: Once cooked, remove the carrots from the oven. If desired, sprinkle with lemon zest and garnish with fresh parsley before serving for an extra pop of freshness.

Enjoy: Serve warm as a delicious side dish that packs a sweet and spicy punch!
