Ingredients

1 cup all-purpose flour

1 cup granulated sugar

2 tablespoons unsweetened cocoa powder

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup milk

1/4 cup vegetable oil

2 teaspoons vanilla extract

1 cup brown sugar, packed

1/2 cup unsweetened cocoa powder (for the fudge layer)

2 cups boiling water

Instructions

Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.

In a large mixing bowl, whisk together the flour, granulated sugar, 2 tablespoons of cocoa powder, baking powder, and salt until well combined.

Stir in the milk, vegetable oil, and vanilla extract until the batter is smooth and pour into the greased baking dish.

In a separate bowl, mix the brown sugar and 1/2 cup of cocoa powder. Evenly sprinkle this mixture over the batter in the baking dish.

Carefully pour the boiling water over the top of the cake mixture (do not stir). The water will create the fudge sauce as the cake bakes.

Bake for 30-35 minutes, or until the cake has set but is still soft in the center.

Once baked, let cool for a few minutes before serving. The fudge sauce will be gooey and rich underneath the cake.

Serve warm, topped with whipped cream or vanilla ice cream for an extra indulgent treat!
