Honey Pecan Cheesecake Muffins

For the Muffins:

1 cup all-purpose flour

1/2 cup crushed pecans

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1 large egg

1/2 cup whole milk

1/3 cup unsalted butter, melted

1/4 cup honey

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1 large egg

2 tablespoons sour cream

1 tablespoon flour

For the Topping:

1/4 cup chopped pecans

2 tablespoons honey

A sprinkle of sea salt

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Prepare Muffin Batter: In a large bowl, combine the flour, crushed pecans, granulated sugar, brown sugar, baking powder, baking soda, and salt. In another bowl, whisk together the vanilla extract, egg, milk, melted butter, and honey. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.

      Make Cheesecake Filling: In a medium bowl, beat the softened cream cheese with granulated sugar until smooth. Add in the vanilla extract, egg, sour cream, and flour. Mix until well combined and creamy.

        Fill Muffin Tins: Spoon a tablespoon of muffin batter into each muffin cup. Then, add a dollop of the cheesecake filling on top (about a tablespoon). Finally, cover the cheesecake filling with another tablespoon of muffin batter, ensuring the cheesecake is fully sealed inside.

          Add Topping: In a small bowl, mix chopped pecans with honey and a sprinkle of sea salt. Spoon a little of this mixture on top of each muffin.

            Bake: Place the muffin tin into the preheated oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the muffin comes out clean (make sure it doesn't touch the cheesecake filling).

              Cool: Once baked, remove the muffins from the oven. Allow them to cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
