2 cups fresh or frozen corn (thawed if frozen)

1 cup sour cream

1 cup grated cheddar cheese (divided)

1/2 cup honey

1/4 cup unsalted butter, melted

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup cornmeal

1/2 cup chopped green onions (optional, for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Greasing a 9x13-inch baking dish with butter or cooking spray will ensure the casserole doesn’t stick during baking.

    Mix the Wet Ingredients: In a large mixing bowl, whisk together the melted butter, honey, sugar, eggs, sour cream, and vanilla extract until well combined.

      Combine the Dry Ingredients: In a separate bowl, mix together the cornmeal, baking powder, salt, and black pepper. This will add a lovely depth of flavor to your casserole.
