Ingredients

For the Shrimp:

1 lb large shrimp, peeled and deveined

1/4 cup honey

3 cloves garlic, minced

2 tbsp soy sauce (or tamari for gluten-free)

1 tbsp rice vinegar

1/2 tsp red pepper flakes (optional, for heat)

1 tbsp olive oil

Salt and pepper to taste

1 tbsp fresh parsley, chopped (for garnish)

For the Rice:

1 cup jasmine or basmati rice

2 cups water or broth (chicken or vegetable)

Pinch of salt

1 tbsp sesame oil (optional, for flavor)

For the Bowl Assembly:

1 cup broccoli florets (steamed or sautéed)

1 carrot, thinly sliced

1/2 cucumber, thinly sliced

1 avocado, sliced

Sesame seeds, for garnish

Lime wedges, for serving

Instructions

Prepare the Rice:

    - Rinse the rice under cold running water until the water runs clear. Combine the rice, water/broth, and a pinch of salt in a medium saucepan. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes. Fluff with a fork and stir in sesame oil, if using.

      Make the Honey Garlic Sauce:

        - In a small bowl, whisk together the honey, minced garlic, soy sauce, rice vinegar, and red pepper flakes (if using). Set aside.

          Cook the Shrimp:

            - Heat olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper. Once the oil is hot, add the shrimp and cook for 2-3 minutes per side until they're pink and opaque.

              - Pour the honey garlic sauce over the shrimp and cook for an additional minute, tossing to coat them evenly until the sauce thickens slightly.

                Assemble the Bowls:

                  - Divide the cooked rice among serving bowls. Top each bowl with a generous portion of the honey garlic shrimp, followed by steamed broccoli florets, carrot slices, cucumber, and avocado.

                    Garnish and Serve:

                      - Sprinkle the bowls with sesame seeds and chopped parsley for a fresh touch. Serve with lime wedges on the side for an extra burst of flavor.
