Ingredients

1.5 lb (680g) pork tenderloin

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon olive oil

Salt and pepper to taste

2 green onions, finely chopped for garnish

Sesame seeds for garnish (optional)

Instructions

Prepare the Marinade: In a medium bowl, whisk together honey, soy sauce, minced garlic, minced ginger, Dijon mustard, apple cider vinegar, and olive oil until well combined.

Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or up to overnight for best flavor.

Preheat the Oven: If using the oven, preheat it to 400°F (200°C).

Sear the Pork: Remove the pork from the marinade (reserve the marinade) and pat dry with paper towels. Season with salt and pepper. In a large, oven-safe skillet over medium-high heat, add a drizzle of olive oil. Sear the pork tenderloin for about 3-4 minutes on each side, until browned.

Bake the Pork: Once seared, transfer the skillet to the preheated oven. Roast for 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Alternatively, you can grill the pork over medium-high heat for approximately 15-20 minutes, turning occasionally.

Prepare the Sauce: While the pork is cooking, pour the reserved marinade into a small saucepan. Bring to a boil over medium heat. Reduce the heat and let it simmer for about 5-7 minutes or until slightly thickened.

Rest the Pork: Once the pork is cooked, remove it from the oven and let it rest for 5-10 minutes to lock in juices.

Slice and Serve: Slice the pork tenderloin into medallions and drizzle with the thickened honey garlic sauce. Garnish with chopped green onions and sesame seeds if desired.

Enjoy: Serve hot alongside your favorite sides such as steamed vegetables, rice, or mashed potatoes.
