4 bone-in pork chops (about 1 inch thick)

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

1 teaspoon ground black pepper

1 teaspoon paprika

1 teaspoon salt

1 lb (450 g) baby potatoes, halved

1 tablespoon fresh rosemary, chopped

1 tablespoon butter

Optional: Fresh parsley for garnish

Make the Marinade: In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, black pepper, and paprika. Reserve 2 tablespoons of the marinade for later use.

    Marinate the Pork Chops: Place the pork chops in a resealable plastic bag or shallow dish and pour the marinade over them. Seal or cover and let them marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Prepare the Potatoes: While the pork is marinating, preheat your oven to 400°F (200°C). In a mixing bowl, toss the halved baby potatoes with olive oil, salt, black pepper, and chopped rosemary until evenly coated.

        Roast the Potatoes: Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

          Cook the Pork Chops: Heat a large skillet over medium-high heat and add the marinated pork chops. Cook for about 4-5 minutes on each side until they are nicely browned and have reached an internal temperature of 145°F (63°C). Brush the cooked pork chops with the reserved marinade during the last minute of cooking for added flavor.

            Add Butter: Once the pork chops are nearly done, melt the butter in the skillet and spoon over the chops for a rich flavor.

              Serve: Serve the honey garlic pork chops with the crispy roasted potatoes on the side. Garnish with fresh parsley, if desired, for a pop of color.
