1 lb (450g) chicken breast, sliced into thin strips

2 tablespoons honey

4 cloves garlic, minced

2 tablespoons soy sauce (low sodium preferred)

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 green bell pepper, sliced

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

1 carrot, julienned

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prep the Chicken Marinade: In a medium bowl, mix together honey, minced garlic, soy sauce, rice vinegar, and cornstarch until well combined. Add the chicken strips and toss until evenly coated. Let marinate for about 15 minutes.

    Heat the Pan: In a large frying pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

      Cook the Chicken: Add the marinated chicken to the hot pan in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the pan and set aside.

        Stir-Fry the Veggies: In the same pan, add the remaining tablespoon of vegetable oil. Add broccoli, bell peppers, snap peas, and carrots. Stir-fry for about 3-4 minutes or until the vegetables are tender-crisp.

          Combine Chicken and Veggies: Return the cooked chicken to the pan with the vegetables. Stir well to combine all the ingredients. Cook for an additional 1-2 minutes until everything is heated through and well-coated with the sauce.

            Garnish and Serve: Remove from heat. Sprinkle with chopped green onions and sesame seeds for garnish. Serve hot over steamed rice or noodles.
