1.5 lbs (680g) boneless, skinless chicken thighs

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

1 tbsp rice vinegar

4 cloves garlic, minced

1 tsp fresh ginger, grated

1 tsp sesame oil

1/2 tsp black pepper

1/2 tsp salt

2 tbsp vegetable oil (for cooking)

1/4 cup green onions, chopped (for garnish)

Sesame seeds (for garnish)

Marinate the Chicken: In a large bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, black pepper, and salt. Add the chicken thighs, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

    Prepare for Cooking: Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off (reserve the marinade for later).

      Sear the Chicken: Once the oil is hot, add the chicken thighs in a single layer (you may need to do this in batches). Sear the chicken for about 4-5 minutes on each side, until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches at least 165°F (75°C).

        Make the Sauce: Once the chicken is cooked, remove it from the skillet and set aside on a plate. In the same skillet, add the reserved marinade to the hot pan. Bring it to a simmer and let it cook for about 5 minutes, or until it thickens slightly.
