1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1/4 cup unsalted butter, melted

2 large eggs

1/4 cup honey

1/2 cup corn kernels (fresh, frozen, or canned)

Optional: 1/4 cup chopped jalapeños for a spicy kick

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt. Whisk until well blended.

      Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, melted butter, eggs, and honey until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined—be careful not to overmix; a few lumps are okay!

          Add Corn and Optional Ingredients: Fold in the corn kernels and, if using, the chopped jalapeños for an extra flavor kick.

            Fill Muffin Tin: Divide the batter evenly among the 12 muffin cups, filling each about 2/3 full.

              Bake: Bake in the preheated oven for 15-20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  Prepare Honey Butter (optional): While the muffins are cooling, mix 1/2 cup softened butter with 1/4 cup honey until smooth. Serve this honey butter alongside the warm muffins for a delicious finishing touch!
