4 large ears of corn

1/4 cup unsalted butter, melted

1/4 cup honey

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt (or to taste)

1/2 teaspoon black pepper (or to taste)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

For garnish: extra thyme, chili flakes, and a sprinkle of sea salt

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Corn: Carefully slice the corn cobs in half lengthwise, and then cut each half into quarters to create rib-like pieces. You should ideally get about 8 pieces from each ear of corn.

      Make the Honey Butter Mixture: In a small bowl, whisk together melted butter, honey, smoked paprika, garlic powder, salt, pepper, and fresh thyme until well combined.

        Coat the Corn Ribs: Place the corn ribs in a large mixing bowl and pour the honey butter mixture over them. Toss until the corn pieces are evenly coated.

          Arrange and Bake: Lay the corn ribs cut-side up on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, turning halfway through, until the corn is tender and slightly caramelized.
