Ingredients

1 lb Brussels sprouts, halved

2 tablespoons olive oil

2 tablespoons honey

3 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

1 garlic clove, minced

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional)

¼ cup toasted pecans or walnuts, chopped (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up.

Prepare the Brussels Sprouts: Clean the Brussels sprouts by trimming the ends and removing any yellow or wilted leaves. Cut them in half from top to bottom.

Make the Dressing: In a small bowl, whisk together the olive oil, honey, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.

Toss the Brussels Sprouts: Place the halved Brussels sprouts in a large mixing bowl. Pour the dressing over them and toss until they are evenly coated.

Roast: Spread the Brussels sprouts in a single layer on the prepared baking sheet. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy, stirring halfway through for even cooking.

Add Toppings: If you like, sprinkle the roasted Brussels sprouts with Parmesan cheese and chopped nuts for added flavor and crunch during the last 5 minutes of roasting.

Serve: Remove from the oven and let cool for a couple of minutes before serving. Enjoy your delicious honey balsamic Brussels sprouts warm as a side dish or a light meal!
