1 cup graham cracker crumbs

2 tablespoons granulated sugar

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 large egg

For the Raspberry Swirl:

1 cup fresh raspberries (or frozen, thawed)

2 tablespoons sugar

1 teaspoon lemon juice

For Topping (optional):

Whipped cream

Fresh raspberries

Prepare the Raspberry Sauce:

    - In a small saucepan over medium heat, combine the fresh raspberries, sugar, and lemon juice.

      - Cook for about 5-7 minutes until the raspberries break down and the sauce thickens slightly.

        - Remove from heat and let cool. Then blend until smooth if you prefer a silkier sauce, and set aside.

          Make the Crust:

            - Preheat your oven to 325°F (160°C) and line a mini muffin tin with cupcake liners.

              - In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.

                - Press about 1 tablespoon of the mixture into the bottom of each cupcake liner to form the crust. Bake for 5-7 minutes until slightly golden. Remove from the oven and let cool.

                  Prepare the Cheesecake Filling:

                    - In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
