Homemade Chicken Stroganoff

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced (button or cremini)

1 cup (240ml) chicken broth

1 cup (240ml) sour cream

2 tbsp all-purpose flour

2 tbsp olive oil

1 tbsp Worcestershire sauce

1 tsp Dijon mustard

1 tsp paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cooked egg noodles or rice, for serving

Instructions
 

Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Cook Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for about 3 minutes until translucent. Then, add the sliced mushrooms and continue to sauté until they are browned and tender, about 5 minutes.

      Make Sauce: Sprinkle the flour over the cooked vegetables and stir thoroughly to combine. Gradually pour in the chicken broth, stirring continuously to avoid lumps. Add Worcestershire sauce, Dijon mustard, and paprika. Cook for about 2-3 minutes until the mixture starts to thicken.

        Combine & Simmer: Return the chicken to the skillet, stir well, and let the mixture simmer on low heat for another 5 minutes. Remove from heat and then stir in the sour cream until fully incorporated. Adjust seasoning with salt and pepper if needed.

          Serve: Serve the creamy chicken stroganoff over cooked egg noodles or rice. Garnish with freshly chopped parsley for a burst of color.
