1 lb (450g) boneless, skinless chicken breasts, sliced into strips

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

2 tablespoons olive oil

2 tablespoons butter

2 teaspoons paprika

1 cup (240ml) chicken broth

1 cup (240ml) sour cream

2 tablespoons all-purpose flour

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked egg noodles or rice (for serving)

Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken strips, season with salt, pepper, and paprika. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    Cook the Aromatics: In the same skillet, melt the butter. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and sliced mushrooms. Cook until the mushrooms are tender and have released their moisture, about 5 minutes.

      Create the Sauce: Sprinkle flour over the mushroom mixture and stir well to coat. Gradually add chicken broth while stirring to avoid lumps. Bring the mixture to a simmer and allow it to thicken slightly, about 2-3 minutes.

        Combine: Lower the heat and stir in the sour cream until fully combined. Return the cooked chicken to the skillet and simmer for an additional 5 minutes to heat through. Adjust seasoning with salt and pepper as desired.

          Serve: Spoon the chicken stroganoff over cooked egg noodles or rice. Garnish with chopped fresh parsley for an added touch of color and flavor.
