2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/2 cup vegetable oil

1 cup granulated sugar

1/2 cup brown sugar, packed

4 large eggs

2 cups grated carrots (about 4 medium carrots)

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans (optional)

For the Cheesecake Filling:

16 oz cream cheese, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/4 cup sour cream or Greek yogurt

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Instructions

Prepare the Carrot Cake Layers:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

        - In a separate bowl, mix the vegetable oil, granulated sugar, brown sugar, and eggs until well combined.

          - Gradually add the dry ingredients to the wet mixture, mixing until just combined.

            - Fold in the grated carrots, crushed pineapple, and nuts, if using.

              - Divide the batter evenly between the prepared cake pans and smooth the tops.

                - Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes before transferring to wire racks to cool completely.

                  Make the Cheesecake Filling:

                    - While the cakes are cooling, prepare the cheesecake filling. Preheat the oven to 325°F (163°C).

                      - In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.

                        - Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, and sour cream until smooth.

                          - Pour the cheesecake batter into a greased 9-inch springform pan. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.

                            - Remove from the oven and let it cool completely before refrigerating for at least 4 hours or overnight.

                              Assemble the Cake:

                                - Once all components are cool, place one carrot cake layer on a serving platter. Top it with half of the cheesecake filling.

                                  - Carefully place the second carrot cake layer on top and spread the remaining cheesecake filling on top of it.

                                    - Refrigerate the assembled cake for at least an hour to set before frosting.

                                      Prepare the Cream Cheese Frosting:

                                        - In a mixing bowl, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, mixing until well combined.

                                          - Stir in the vanilla extract, adjusting the consistency with milk as necessary.

                                            Frost the Cake:

                                              - Once the cake has set, spread the cream cheese frosting evenly over the top and sides of the cake.

                                                - For added texture, you can press some chopped nuts into the frosting and decorate with additional grated carrots or edible flowers if desired.

                                                  Serve & Enjoy:

                                                    - Slice and serve chilled. Enjoy the delightful mix of spiced carrot cake and creamy cheesecake that’ll leave everyone in awe!
