1 cup popcorn kernels (or 12 cups popped popcorn)

1 cup unsalted butter

2 cups brown sugar (packed)

½ cup corn syrup

1 teaspoon vanilla extract

½ teaspoon baking soda

½ teaspoon salt

Optional: 1 cup chopped nuts (peanuts, almonds, or walnuts)

Pop the Popcorn: Start by popping the popcorn kernels using an air popper, stovetop, or microwave. If using stovetop, heat 2 tablespoons of oil in a large pot over medium heat, add the kernels, cover, and shake frequently until popping slows. Pour the popcorn into a large bowl, removing any unpopped kernels.

    Prepare the Caramel Sauce: In a medium saucepan, melt the unsalted butter over medium heat. Once melted, add the brown sugar and corn syrup. Stir continuously until the mixture comes to a rolling boil. Once boiling, stop stirring and let it bubble for 4-5 minutes until it turns a deep amber color.

      Add Flavorings: Remove the saucepan from heat and carefully stir in the vanilla extract, baking soda, and salt. The mixture will bubble up, so be cautious. Mix until smooth and well combined.

        Combine: Immediately pour the hot caramel sauce over the popped popcorn, stirring quickly to coat each piece evenly. If desired, fold in the chopped nuts for added crunch.

          Bake for Crunch: Preheat your oven to 250°F (121°C). Line a baking sheet with parchment paper. Spread the caramel-coated popcorn in an even layer on the parchment. Bake for about 1 hour, stirring every 15 minutes to ensure even cooking and prevent burning.
